Chicken Tetrazzini

A fairly uncommon, but amazing, meal I had growing up was Chicken Tetrazzini. I loved the flavor of the chicken, mushroom, and peas—yes, peas—in this creamy sauce with noodles. The smell filled the house like nothing else. “But, Brent,” you insist, “aren’t peas a legume, and a sacrilege to all things paleo?” Technically yes; but, in practice, it depends on your philosophy. We believe that perfect can be the enemy of good, and the occasional grey area food (for many people) will not cause much upset, but your mileage may vary. That said, you can always leave the peas out and/or substitute diced carrots. If you’re curious as to why we are comfortable with fresh/frozen peas in our diet on occasion, you can read this thorough explanation from Mark Sisson.

Chicken Khao Soi (ข้าวซอย)

Khao Soi is a delicious chicken soup, with history in Laos and northern Thailand. As you may have noticed recently, we’ve been in love with Thai food as an indulgent take-out choice over the past few months. Khao Soi translates to “cut rice” in Thai, but we decided to leave noodles out of this dish. We tried making this a few different ways, and noticed that the noodles increased “splash” factor (which increased 1000x every time I had on a white dress shirt), but didn’t add to the flavor. Our favorite method to add “noodles” was to use zoodles (like in our chicken zoodle soup)—right at the last few minutes of cooking so they would not be too soggy.

We think you’ll love this recipe as a change of pace for your soup routine. As the weather is cooling rapidly here, this spicy soup is fantastic for staying healthy (thanks, turmeric) and satisfied. We’ve mixed some of the traditional toppings from the Laotian and Thai versions, because pork rinds.

Chicken Pesto Pasta

Chicken pesto pasta was a mainstay in my house growing up. It was served with extra pine nuts and bowtie or shell pasta, and it was often eaten straight out of the tupperware standing in front of the refrigerator. Yes, I love pesto. We’ve made some other pesto-related dishes, but it was really time to take a stab at the classic. We used our awesome spiralizer to make zucchini noodles (or zoodles) that rival the wheat-based pasta we no longer eat.

Make this chicken pesto pasta for a weekend picnic, or when planning out meals for the week. We ate almost all of it in a matter of hours, but the two leftover servings we set aside were great during the week as well. Simple Grilled Barbecue Chicken

A mainstay of the summertime is barbecue. We love barbecue chicken, ribs, and more; but we often don’t make the time to get it done. The one exception is Memorial Day—I usually get up at 7 am to start smoking ribs for dinner. That being said, we love chicken drumsticks and thighs. Not only are they a great meal, we can cook them in bulk and pack them in meals for the week.

This recipe uses the rib rub we put together for our Memphis Dry Rub Ribs, and is less involved than our other Split Barbecue Chicken recipe. You’ll love these alone, or with a side of our barbecue sauce. Happy grilling!
