The blog recently has been somewhat busy with things inspired by or created by my mom, and this chocolate fudge recipe is no different. In that spirit, I’ve adapted one of her favorite holiday sweets to suit our preferences: 100% dark chocolate, no added sugars, and no dairy (sweetened condensed milk).
This is a fairly easy recipe that requires a good amount of patience and “hurry up and wait” skills. We condensed coconut milk in place of condensed milk, and while it wasn’t very difficult, it certainly took some time. Trust us, it’s worth the wait.
2 14 oz cans full fat coconut milk, reduced by half
15 oz 99-100% dark chocolate, roughly chopped
1 tsp mint extract
Pour coconut milk into a pot, and reduce over the stove, whisking occasionally until halved. This took us about 30 minutes over low heat. Be sure not to burn the coconut milk on the bottom of the pan.
While the coconut milk simmers down, chop your chocolate into rough pieces. It does not need to be a fine mix, but the larger the pieces, the more time it will take to melt and mix with the coconut milk.
You’ll use a double boiler to melt down the chocolate on medium-low heat (or make your own makeshift one like we did) along with the coconut milk. Pour the coconut milk and mint over the chocolate and mix slowly.
Once the coconut milk, mint, and chocolate have mixed thoroughly, pour into a parchment lined baking pan.
Allow to cool in the refrigerator for at least 2 hours, and then cut into pieces.
This is definitely for dark chocolate lovers, and is not super sweet; but is a great way to enjoy the treats this holiday without going overboard.

Sounds like something I will be trying soon. Maybe I’ll add a touch of sea salt on top to bring out the depth of the chocolate flavor since it’s not very sweet.
