Happy St. Patrick’s Day! Also, if you haven’t been living under a rock, you know that today marks the one month book-iversary of Bill and Hayley’s latest grain-free adventure. You probably know them from either their website, their phone/tablet app, or one of their many other adventures (including most recently chicken raising). In Make it Paleo II, they’ve hit it out of the park with over 175 new recipes that we can’t get enough of. Let me tell you about three of my favorite things about this book.
Awesome photos. It usually goes without saying that when you buy a cookbook, it will have pretty pictures of the food you’re about to make. Bill & Hayley have always been at the forefront of the paleo photography scene, and this book is a testament to their hard work. Not only do the photos make you want to get into the kitchen, but it again smashes the arguments from those who complain that you “can’t eat anything good” when eating paleo. I call shenanigans.
Clear dietary guidelines. As the paleo movement has grown, many of us have learned that it’s not just about the gluten or the soy. Some of us have issues with nightshades, others with eggs, and some with diary. Trying to find recipes that work for a dinner party of limited guests used to be really difficult, or you would just go for the least common denominator. The guides in the book, as well on each recipe, give you an easy way to plan for whatever restrictions you or your guests might have.
Tortillas, Pasta, Pork Dumplings. Those are just 3 items that were relegated to “off-roading” or “cheat days” for us. With this cookbook, we now can really treat ourselves with items we thought were a thing of the past without the fear of breakouts, congestion headaches, or grogginess. This is really cool, and we think you’re going to love it.
We couldn’t help but share a recipe to get you started, and we of course chose wings. These Honey Sesame Wings are not your standard bbq or buffalo, but you’ll definitely be adding them to the standard wing rotation. Enjoy!

Honey Sesame Wings
Ingredients
honey sesame sauce
1/2 tsp coconut oil
1 tsp grated fresh ginger
1 tsp grated garlic
1/2 tsp red pepper flakes
1/4 C coconut aminos
1/2 tsp fish sauce
1 Tbsp toasted sesame oil
1 Tsbp raw honey
24 chicken wings, cut into winglets
sea salt
1 Tbsp sesame seeds, for garnish
1 scallion, thinly sliced, for garnish
Method
Make the sauce: Heat the coconut oil in a small saucepan over medium-low heat. Add the ginger and garlic and sauté until fragrant. Add the red pepper flakes, coconut amino, an fish sauce and stir to combine. Add the toasted sesame oil and honey and whisk over medium heat until the honey has completely dissolved and the sauce starts to bubble slightly. Reduce the heat to low and cook, stirring every so often, until the sauce has reduced and thickened enough to coat the back of a spoon. This can take up to 20 minutes.
While the sauce is reducing, grill the chicken wings. Preheat a grill to medium (400ºF). Rinse the chicken under cold water, pat try with a paper towel, and season with salt. Grill for 20-25 minutes, until cooked through, turning every 5 minutes. (Most grills have hot spots and cooler spots, so moving the chicken around a bit helps to ensure even cooking.)
Toss the chicken wings with the honey sesame sauce, sprinkle with the sesame seeds, and top with the sliced scallion.
