Brent and I made a commitment to getting more greens into our diet this summer and morning smoothies have been a fast and delicious way to do it. This recipe is so simple, it almost feels like it shouldn’t count. Still, we have experimented with a few variations and ultimately found that we like this collection of ingredients best. The smoothie is tangy, bright, and filling. It would be refreshing any time of the day, but we have enjoyed sipping it each morning the past few weeks. (It’s been too hot to crave eggs or other, heavier breakfast items.) We hope you’ll agree that this is an excellent way to start your day!
Ingredients
1/2 large seedless cucumber
1/2 of 1 whole lemon, most seeds removed
flesh from 1 ripe avocado
4 C fresh kale
1 1/2 C water
Method
Add cucumber, lemon, and avocado into your blender; we used our Vitamix.
Pack the rest of the container with your kale, and then add water.
Pulse until smooth.
Serve and enjoy!

What could you recommend in place of the cucumber? I am allergic to Gourds. I have never thought of putting an avocado in a smoothie so I would like to try it.

Hi Andi, you could try a cored green apple for a little sweet and tart flavor, or simply some ice cubes. Enjoy!

sounds really good. I love that it’s not loaded with sugar. Too many green smoothies have way too many carbs for my taste.
