Pumpkin Spice Banana Pancakes

With the autumn season finally feeling like autumn (cool, crisp mornings for the win!), I have started craving warm spices, pumpkin, cider, hot teas, and, admittedly, holiday treats. This past weekend, I experimented with a new breakfast treat that draws from the theme of pumpkin-spice-everything at this time of year.

You may be familiar with two-ingredient banana pancakes, and that was my starting point. These pumpkin spice banana pancakes are delicate like two-ingredient banana pancakes; but they are well worth the care they require. I would argue you can eat them anytime of day, without syrup, because the banana and pumpkin play beautifully off each other to satisfy your sweet tooth. We hope you enjoy them!

Mushroom, Asparagus and Bacon Quiche

Breakfast foods are delicious, and there’s no reason to limit them to first thing in the morning or the occasional weekend brunch. For this quiche, we used a tool essential in making a cheesecake—a springform pan. This allowed us to make a bacon crust, which was amazing. We will definitely use this trick again in the future and mix up the ingredients as we go.

One word for the wise, having made this: You might want to line the springform pan with parchment paper before layering in the bacon crust. We did not do that and it turned out OK; but we think it would have been a smoother experience. We had a little leakage onto the baking sheet that we placed underneath the pan, and the quiche did stick somewhat to the bottom of the pan. If we had thought to use the parchment paper, that may have been avoided. It’s not a deal-breaker by any means, but it would have made a positive difference for cleanup. This was so good, even our 9-month-old ate it. Yes, he even ate the mushrooms and asparagus (in fact, Heather claims they were his favorite part). I’m still not sure I believe it.

Breakfast Taco Bowl

In college, pizza was a perfect breakfast food. I never tried breakfast tacos, but breakfast burritos were amazing when we had them at home. This week is my first attempt at taking care of Otto without the help of Heather (she’s away at a work conference), so we planned a recipe that would take some of the meal planning off my plate for the week.

This is kind of a deconstructed breakfast burrito, and the plantain chips gives it the crunch of a taco. If you include dairy in your diet, feel free to also serve this with high-quality cheese and/or sour cream. Sliced jalapeños are great, too!

Tex-Mex Breakfast Bake

For the start of 2017, I’m trying something that I normally despise—eating breakfast. Most mornings, I don’t find myself particularly hungry and I get by with a cup of black coffee and wait until lunch. That said, it’s always been a hunger decision rather than a dislike of breakfast foods. You can see from our multiple breakfast recipes that we’re pretty keen on breakfast foods (although Heather is a much bigger fan of pancakes and waffles).

This recipe hits a number of must-haves for me: you can make it in one pot, it makes multiple servings, and you can make it spicy. This skillet dish reminds me a bit of chili, but the addition of cauliflower and the final step of baking the dish brings the texture closer to a breakfast casserole. And if you’re like me, and like things spicy, you can cover it in hot sauce with no regrets.

Easy Pesto Egg Bake

If you’re like us, you’ll have a full house this Thanksgiving for the holidays. This means you need more food for each meal of the day—breakfast, lunch, dinner (and snacks). Most days I don’t eat breakfast, so Heather makes something for herself. With at least two more people in the house, we love having options for bigger and easier breakfast meals.

This pesto egg bake is one of the easiest things we’ve ever put together, and it’s awesomely tasty. Regardless of whether you use a pre-made pesto, or make one of your own (we have a few!), you’ll be ready to go in no time.
