Breakfast Taco Bowl

In college, pizza was a perfect breakfast food. I never tried breakfast tacos, but breakfast burritos were amazing when we had them at home. This week is my first attempt at taking care of Otto without the help of Heather (she’s away at a work conference), so we planned a recipe that would take some of the meal planning off my plate for the week.

This is kind of a deconstructed breakfast burrito, and the plantain chips gives it the crunch of a taco. If you include dairy in your diet, feel free to also serve this with high-quality cheese and/or sour cream. Sliced jalapeños are great, too!

Tex-Mex Breakfast Bake

For the start of 2017, I’m trying something that I normally despise—eating breakfast. Most mornings, I don’t find myself particularly hungry and I get by with a cup of black coffee and wait until lunch. That said, it’s always been a hunger decision rather than a dislike of breakfast foods. You can see from our multiple breakfast recipes that we’re pretty keen on breakfast foods (although Heather is a much bigger fan of pancakes and waffles).

This recipe hits a number of must-haves for me: you can make it in one pot, it makes multiple servings, and you can make it spicy. This skillet dish reminds me a bit of chili, but the addition of cauliflower and the final step of baking the dish brings the texture closer to a breakfast casserole. And if you’re like me, and like things spicy, you can cover it in hot sauce with no regrets.

Easy Pesto Egg Bake

If you’re like us, you’ll have a full house this Thanksgiving for the holidays. This means you need more food for each meal of the day—breakfast, lunch, dinner (and snacks). Most days I don’t eat breakfast, so Heather makes something for herself. With at least two more people in the house, we love having options for bigger and easier breakfast meals.

This pesto egg bake is one of the easiest things we’ve ever put together, and it’s awesomely tasty. Regardless of whether you use a pre-made pesto, or make one of your own (we have a few!), you’ll be ready to go in no time.

Fig Coconut Yogurt

Have I mentioned that we have a fig tree? Two, actually! But one is still a baby. The mature one started bearing beautiful, plump fruit in mid-August and it keeps on giving. On Saturday of this past weekend alone, I picked 31 fresh figs! I gave most of them away to neighbors, but I experimented with some in our kitchen as well. (True story: My second experiment did not fare well but I hope to perfect it soon!)

Thankfully, this super easy treat was a success—it’s almost hard to go wrong with delicious, fresh fruit and coconut milk—you may  to our Meyer Lemon Chia Pudding. The orange zest, married with the slight tang from the skins of the fig fruits, along with a thinner consistency remind me of yogurt. So, that’s why I’m calling it a “yogurt.” Enjoy it as breakfast on-the-go, a refreshing snack, or light dessert. Whatever its name, whenever you eat it, I think it’s really quite good and I know you will, too!

Spinach and Tomato Egg Bake

I (Heather) think I’ve told you: Breakfast is one of my favorite meals of the day, and I love eggs. I love them fried, scrambled, poached, baked—any way you can think of. It’s most interesting and fun to mix up whatever vegetables are available in the refrigerator. This is a simple and tasty egg bake, even though it was crafted with leftover ingredients. Make it anytime for grab-and-go weekly breakfasts, for brunch, or even breakfast for dinner!
