
After spending the day with The Domestic Man a couple of weeks ago, he inspired me with his talk of seared scallops. With a photo result and the idea of delicious scallops and bacon in my mind, I went to town on a version of my own. We had purchased capers for another recipe, and I have always loved how they paired with salmon and salads.
All that being said, these came out great. Especially cool is that they only require 5 ingredients, so you won’t have to go raid Whole Foods to make this delicious dish.
Ingredients
1.5 lbs scallops
1/4 C ghee
1 Tbsp capers
3 strips bacon
1 Tbsp lemon juice
Salt & pepper to taste (optional)
Method
Cut bacon into thin strips, and fry on medium-high heat for 4-6 minutes, until browned and slightly crispy. Remove bacon from pan but leave grease for cooking the scallops.
Rinse scallops and pat dry with a paper towel. Lightly sprinkle with salt and pepper, if you wish to.

Sear scallops for 30-40 seconds per side, or until golden brown. Be careful not to overdo it, as scallops can quickly turn into rubber erasers if overcooked.

In a small saucepan, heat up the ghee, capers, lemon juice, and bacon for 7-10 minutes on medium heat. When finished, spoon over scallops and serve.

The photos are beautiful and you make scallops looks delicious. I'm trying to make myself like more seafood…bacon topped seafood sounds like a good place to start!

No, it’s not a typo; 1/4 C ghee is what we used to make the sauce. It didn’t go to waste, but you could use less if you want.
