On more than one occasion, I’ve walked past the deli counter green with envy over the variety and quality of the salad offerings. There’s something magical about the thin slices of cucumber, the finely shredded vegetables, and the perfectly-positioned garnishes.
This particular cucumber salad came to be after seeing a deli-style cucumber salad for sale at Costco. It was a great idea, but had about as much sugar as a candy bar and preservatives. This has neither of those downsides, and has a crunch, spice, and flavor that is a winner. We know you’ll enjoy this salad.
Ingredients
1 medium red onion thinly sliced (1 1/2 C)
1 English cucumber thinly sliced (4 C)
1/4 C Roasted red bell pepper strips finely diced
1/4 C raw apple cider vinegar
4 cloves garlic, pressed
1/2 tsp dried dill
1/4 tsp ground mustard
1/4 tsp kosher salt
Method
Thinly slice your red onion and cucumber using a mandolin. It’s one of our favorite kitchen tools for slicing vegetables.
Mix raw apple cider vinegar, garlic, dill, and mustard in a small bowl.
Toss sliced cucumber, red onion, and diced roasted red pepper with salt.
Pour over apple cider vinegar dressing and toss. Allow to rest at least 30 minutes before serving.
