Lobster Cauliflower Risotto

Sunday was our first Valentine’s Day together as a married couple. Honestly, I nearly forgot it was coming. We have been so busy with work and getting settled into the new house, it seemed to sneak up on us. We don’t normally put a lot of stock into Valentine’s Day, but it crossed my mind that maybe we should have planned something nice.

But, I simply grabbed a few extra special ingredients at the store and we spent Sunday normally. We went to the gym, cooked a few recipes, and watched a movie. Still, something was extra special that day. Maybe it was the magic of Valentine’s Day. Or, maybe it was the magic of this recipe. We hope you enjoy it as much as we did!

Homemade Tuna Salad

It’s been a crazy couple of months for us: We got married, bought a house, and now are working hard to get the new place ready to move in. When we’re looking for a quick and easy meal that is versatile and lasts all week, we turn to this tuna salad recipe. That said, we’re back to working on packing. Kanom Jeeb Bites

Kanom Jeeb is a steamed Thai dumpling that is usually served in a dough wrapper. It’s one of the indulgences we allow ourselves when ordering Thai food occasionally. We love them and their tangy dipping sauce, but realized the things that make it delicious (pork, crab, water chestnut) have nothing to do with the wrapper. Then, inspired by Russ’ awesome Gyoza Bites from his book Paleo Takeout, and we knew we had a winning recipe idea.

These Kanom Jeeb bites are very easy to make, and are a delicious paleo appetizer or a meal split between two people. We devoured them pretty quickly, and are really looking forward to making them again.

Spicy Crab Salad

This post is a quick and easy recipe that we think you’ll love: Spicy Crab Salad. Despite our name, we have been living in Maryland for the past 3 years (boy, how time flies). If Maryland is known for anything, its crabs are near the top of the list. We’re no strangers to crab salads (check this delicious treat out), and felt it necessary to share another quick, easy crab salad for those of you who love the heat.

This crab salad has a definite kick to it. If you’re less into spicy foods, consider halving the hot sauce (or double everything else!). Either way, we think this will be a hit in your kitchen and around the picnic table. Kick off the great, summer weather with this refreshing, spicy crab salad.

Shrimp Dip

Does your mother have staples for every party she throws? Mine does. Seven-layer salad, mini ham sandwiches, olives, cheese and crackers, sweet and sour cocktail wieners, etc. The list is actually quite long, and her menus vary a little based on the season. When I was little, my mother and father would host bridge parties, birthday parties, holiday parties, work anniversary parties, etc. year-round. I loved it. My sister and I would help making the finger foods. Once the party started, we were to be “seen and not heard;” but we got to eat as many appetizers as we liked as long as we kept our clothes clean.

When I was in high school, my mother found a new appetizer to add to her repertoire: Shrimp Dip. This is a “clean” version of the recipe she was given by a friend. I don’t trust mayo that I don’t make myself, and dairy doesn’t do me any favors. To my mother’s surprise, mine tastes just like hers! We hope you’ll like it as much as she does.
