One of the main rebuttals for going on a gluten free or a paleo diet is how difficult it is to get by without noodles and pasta. We appreciate that those foods have been a staple and mainstay in a lot of households, and losing them is a bit jarring. Although we’re slightly behind the curve here with the “spiralizer” kitchen gadget, now that we have one, we can’t get enough of it! I have to admit, the 4th of July is one of my favorite holidays, hands down. It’s mainly because of the fireworks, but I also love the warm weather, grilling, and spending time with friends. We’ve been scratching our heads a little bit, as we didn’t know what to do for our food this year—furthermore, we’re not sure if we are having family over, how many people, etc.

Still, I procrastinated getting things done here by putting together this: a list of helpful hints for those who don’t have the same fervor for the grill and for the 4th of July (or simply need advice on grilling) as well as a collection of drinks, starters, main dishes, and desserts. We often make a lot of large meals in bulk in order to get through the week with minimal cooking during the week—especially pulled pork, chili, and salmon. When it comes to snacks, we haven’t done much in terms of specific meals; instead, if we’re feeling peckish, we generally just have small portions of the other larger meals.

This past weekend we were lucky to get together with a few of the local paleo food bloggers in the greater DC area. A long, long time ago (or at least it feels that way), we went to a get-together at Matt and Stacy’s house—otherwise known as the Paleo Parents—and happened to socialize and hang out on the couch with Russ and family over at The Domestic Man. All of that was over two years ago, and we’ve had countless fun get togethers and encounters since then. Adding to the fun, we got to meet Jennifer and family of Predominantly Paleo. It’s great to have so many like-minded families in the area, and hope to have more time hanging out in the future.

Pork Takeout Fake-Out

This Pork Takeout Fake-Out recipe came about as the result of needing to use up vegetables we had in the refrigerator and my mom’s desire to have Chinese food Friday night.

My parents were scheduled to visit this past weekend. So, Thursday evening of last week, I took two packages of thinly sliced pork out of our freezer so I could cook it on Friday. I didn’t have a plan for that pork, but I was tired. I told myself “I’ll figure it out later” and went to bed.

Friday was a busy day with my parents, and soon enough it was dinner time. My mom suggested we just get Chinese food, but I had defrosted pork! Plus, we had a bunch of veggies in our refrigerator that needed to be eaten soon. So, I quickly formulated a plan for some “takeout fakeout” and got to work. My parents loved it. I did, too.
