Baked Buffalo Wings

No offense to apple pie, but in my mind the most American food of the 21st Century has to be buffalo wings. Not just buffalo wings, but anything buffalo flavor. It’s almost the PSL (pumpkin spiced latte, for those unfamiliar) for a large portion of the country. I’m not above this trend, and love wings that are borderline painfully spicy. Heather doesn’t like to intentionally eat foods that make her cry, but we both love these wings.

I wanted to put together a wing that would have the flavor I like without the intense heat that turns off a lot of people. These buffalo wings have the flavor, with almost no bite. There is some heat, but after eating a dozen you won’t be crying—at least neither of us were. We have made these wings each weekend throughout the playoffs, even with the devastating Packers loss to the Seahawks. We’re still a little sour over the way that game ended; nevertheless, we will be watching Superbowl XLIX with friends and these wings.

AIP-Friendly Game Day Wings

As long as we’ve been on our paleo journey, we have been fortunate to not find ourselves specifically reactive to anything beyond standard grains, dairy, and legumes. Because of this, we have had the terrible habit of visiting friends, such as the Paleo Parents, with homemade treats that those following an autoimmune protocol (AIP) can’t enjoy. After 2-plus years of embarrassment for spacing out on this fact, Heather made a commitment to put together something that all could enjoy. That’s how she came up with today’s co-post of AIP-Friendly White Barbecue Sauce.

To go with this barbecue sauce, I put together these wings. They have a sweet and savory flavor that won’t have you missing the fiery spice of traditional barbecue wings. I’ll be honest—at first I was really intimidated by the restrictions of AIP but thankfully I found an exhaustive listing of what can, might, and can’t be used on the protocol (Thanks, Sarah!). These are great for game day, or for any other occasion where you want finger foods and want to make sure everyone can enjoy them.

Spicy Curry Chicken Wings

Brent loves buffalo wings, and while I love his Zesty Buffalo Wings, I’ve always preferred wings with other flavors—sweet barbecue, teriyaki, honey barbecue, jerk, spicy barbecue… (Hi, my name is Heather and I have a problem: I love barbecue.) So, with all the big football games lately, I’ve been itching to experiment with the wings.
