If you haven’t had something with coconut and lime this summer, then you haven’t had a real summer. Coconut and lime are a classic summer combination and I love them. The tangy, bright and refreshing taste of lime with the smooth, slightly sweet coconut and just a touch of spice (implied), it makes everything nice! Shrimp, chicken, drinks, veggies—I could do a lot with coconut and lime. Perhaps I should do a series…?

The coconut’s origins are debated by botanists and food historians, but in my personal history meals involving coconut and lime were a rare and special treat with no particular regional history. Whether the recipe was inspired by Hawaiian, Thai or Caribbean flavors, I loved it and savored every bite. And the coconut and lime pairings have ranked among my favorites: coconut-lime shrimp skewers, coconut-lime granita, curry over coconut-lime rice, etc.

Beyond Bacon Book Review

I have never been to a book signing event. I have, however, seen the occasional author modestly sitting at a table in the PX (military people, you know what I mean–for those of you who don’t, it’s kind of the Walmart of the military base), somewhat shyly peddling their new book. The look on their faces was always the same: uncertain anxiety, on the verge of completely deflated because no one notices them, never mind stops to check out their book.

The Paleo Parents, Stacy and Matt’s book release and signing event for Beyond Bacon was the exact OPPOSITE. When I arrived, just 20 minutes after things kicked off, The Red Apron was packed. I could barely even get in the door. The Paleo Parents have been a big force not just in the paleosphere, but in our own real food journey–we’ve made many friends at their gatherings and it’s really helped us step up our cooking and blogging acumen.

Apple-Bacon Pork Chop Stew

This recipe was born of St. Patty’s Day excitement.  While we were trying to cook for the weekend, cabbage and pork were some popular recurring themes.  In that spirit, we put together this “stew” of sorts.

This is a tasty, hearty dish that could be stepped up with your favorite tuber (potato, sweet potato), but stands well on its own.  I suggest you give it a try for a change of pace with bone-in pork chops.

Ginger Chicken with Broccoli

Believe it or not, Brent and I have never eaten at P.F. Chang’s until Stacy invited us among others to join her in a re-creation party, P.F. Chang style. Of course we wanted to participate, but having no idea what the food was like (other than knowing it was asian-themed casual dining).

A few days after Stacy’s invite, we ordered take-out from P.F. Chang’s. Brent got the gluten-free thai basil sambal noodles with shimp (from the new “Inspired” menu–recreated here) and I got the gluten-free ginger chicken with broccoli. Before diving in, set aside a small container of each of our dinner items for taste-testing during our actual cooking experiment the next day.

We used to order delivery pizza a couple times a month–it was either that or Chinese food–whenever we were over-stressed by work and grad school or simply just too tired and lazy after an excessively long day. It was easy. It was fast. It was tasty. But delivery doesn’t save you money and it definitely doesn’t help you stay healthy. So, we created the supreme pizza quiche after the pizza we used to order most often. It’s like eating pizza for breakfast, but a way healthier version. Who wouldn’t want that on occasion? YUMM.
