Thai Basil Sambal Noodles

About a week and a half ago, we were challenged to put together a recipe that was inspired by some of the delicious options over at P.F. Chang’s.  This recipe was a result of that experiment, as was the recent ginger chicken.  This is a delicious dish, and I would definitely recommend it.

Our spicy coconut sambal sauce is definitely spicier, but this can be easily circumvented by deseeding the serrano peppers or using a milder pepper in its place.  Either way, this was a dish that had the house smelling amazing for hours, and I think you’ll really enjoy it.

Seafood Alfredo

This Mother’s Day, we were able to take over my mother’s kitchen and really go to town on cooking some recipes not just for food for the week, but for me to pay homage to my mom, who really turned me on to cooking.  One of my favorite recipes she used to always make for me is her seafood fettuccine alfredo, which is absolutely to die for.  It is also full of dairy and wheat.  While I love that recipe, it definitely doesn’t fit into my current lifestyle, and I would hate to remember it for how it would inevitably make me feel now than how great it tasted.

Fried Calamari

Fried calamari was one of my all-time favorite things to eat at a restaurant.  Growing up, I had a close friend whose parents owned a restaurant, and whenever we would hang out upstairs in the “apartment” above the restaurant while her parents worked, they’d feed us.  9 times out of 10 I wanted the fried calamari (I think my other choice was baby back ribs…what can I say, I was a growing boy).  Since changing up my diet and staying away from grains and legumes, I haven’t done much in the way of fried foods, so this dish left my life.

Cod Fritters

One Saturday night, Brent and I watched episode after episode of Anthony Bourdain’s show, A Cook’s Tour. I was nearly asleep when episode 7 of season 1, “Cod Crazy,” began. Anthony was traveling in Portugal, where salted cod has a historical and cultural significance. I woke up at the word cod. It caught my attention because just that afternoon we had bought cod. We didn’t have the slightest idea of what to do with it.

Steamed Mussels

Mussels are something that I’ll get occasionally at a restaurant, but rarely have we made them at home.  Especially since changing my eating habits, I’ve found that mussels are rarely super contaminated with sugar, grains, or legumes, so they’re a standard go-to if we’re out to eat at an Italian restaurant.  What I never really connected the dots on was how easy they are to make at home.  I make littleneck clams for my mom and me on the grill, but this was my first attempt at mussels at home.  This will be a more regular thing from now on.
