Since choosing to live a gluten- and dairy-free lifestyle three years ago, we have generally skipped the toast, croissants, and other bread-y goods prepared by family and friends for brunches, dinners, and parties. We have ventured on a few successful baking adventures—see our Orange-Cranberry Bread, Bacon Jalapeño Bread, and Pumpkin “Cornbread.”
Still, we have shied away from rolls, donuts, and croissants until recently. A few weekends ago, I was doing some exploratory ready about egg replacement (because one of my nephews is allergic to egg, among other things) and learned that chia seed flour can mimic the stretchy consistency of glutenous dough.
Growing up, corn was a regular part of my diet. Corn was my favorite vegetable; little did I know it was actually a grain. We ate it all sorts of ways–grilled corn on the cob, frozen corn microwaved and seasoned with salt and butter, creamed corn over mashed potatoes, cornbread, etc. My absolute favorite was cornbread. Those dense, slightly sweet squares of golden goodness never lasted long.
We came up with this bread recipe a month or two ago following our invitation back to the Paleo Parent‘s house for another great pot luck, this time to celebrate their upcoming book, Beyond Bacon. As adamant pork lovers, we couldn’t help but make something with bacon in it. Taking Heather’s awesome orange-cranberry bread as a template, we decided to go a little further.
We had quite a few fresh cranberries leftover from Thanksgiving. I searched our cookbooks and the web for inspiration–trying my best to avoid the typical muffins, breads, and other sweets. I know, that sounds a little silly; but seriously, the holidays are so full of baked goodies, I wanted to make something different. Alas, my efforts to make craisins failed miserably, and the cranberry sauces and baked goods recipes abound.
