Pumpkin “Cornbread”

Growing up, corn was a regular part of my diet. Corn was my favorite vegetable; little did I know it was actually a grain. We ate it all sorts of ways–grilled corn on the cob,  frozen corn microwaved and seasoned with salt and butter, creamed corn over mashed potatoes, cornbread, etc. My absolute favorite was cornbread. Those dense, slightly sweet squares of golden goodness never lasted long.

Paleo Doggie Delights

We really have enjoyed the benefits of a paleo diet for our own health and wellness, and we felt it was only fair to share the love with our dog, Mason, as well.  He does eat a real-food, gluten-free dog food, but we have had mixed success with dog treats.

Leave it to my Mom to come up with a cool, paleo-friendly dog treat recipe.  She also hit a home run with her mushroom soup.  Another fun fact is that she loves crafting, and makes a lot of the napkins and place settings for our photo shoots.  You can check out her stuff on her Etsy site.

Haddock Fish Sticks

One of my guilty pleasures growing up was always fish sticks and those breaded fish patties.  They’d occasionally have them at school lunches, and my dad has always been a fan of the frozen fish from our local freezer section.  I haven’t purchased anything of the sort in quite a long time, and shudder to think how (and from what) they’re produced, but they sure were tasty.

Greek Pork Loin Roulade

We really love cooking with pork.  It’s not uncommon for us to have a good supply of bacon in the house, and we even did a crown roast for Easter this past year.  One of the things I’d always been interested in is doing a roulade.  We’ve done it before with chicken thighs, but the result was small individual pieces rather than one larger piece to serve from.

Oregano Garlic Chicken

This recipe was born somewhat as an accident; we were going to split a chicken to put on the grill, and decided that rather than season the exterior of the chicken, we would try to season underneath the skin.  This was an amazing decision.

Don’t get me wrong, it looks and feels a little different at first if you haven’t done it before, but the result is totally worth it.  We cooked this on our grill with indirect heat, and made a similar recipe in the oven with a grill pan.  Both are delicious, but it is the time of year to grill–so if you can get outside and grill, get some vitamin D and chicken on!
