Homemade Dairy-Free Irish Cream

It’s after St. Patty’s Day, but I’m sure you won’t mind a post about a delicious drink that’s inspired by a commonly imbibed beverage—Baileys Irish Cream. We didn’t celebrate much this past weekend; we kept a fairly low profile, doing the typical weekend activities of grocery shopping, cooking, and laundry. We also managed to tidy up the garage a bit and spend some time enjoying the lovely spring weather. Still, I found myself inspired and whipped this up as a celebratory treat. I hope you enjoy it!

Strawberry-Lime Margarita

Heather and I recently wrapped up our summer vacation. For our time away, we took a road trip from the Washington, D.C., area to the Northwoods of Wisconsin to celebrate the 50th wedding anniversary of Heather’s parents. The road trip, celebrations, and time with family were all wonderful, and we had many reasons to celebrate.

We might typically keep our libations simple for celebrations—Bold Rock cider is a favorite. But, sometimes, we want to add a little more flare. Nothing says flare in the summer better than a frosty, festive beverage. This strawberry-lime margarita takes advantage of frozen and fresh strawberries, lime juice, and tequila. If avoiding alcohol, or making for the whole family, this works great with seltzer or mineral water. We know you’ll enjoy this refreshingly tart drink the next time you choose to celebrate. It is not something to drink quickly, or in large amounts, but it is a lip-smacking treat.

Spicy Bloody Mary Mix

This past week the east coast, and our area in Washington DC, experienced a significant snow storm unlike anything we had seen in recent years. We were hit with over 2 feet of snow, and it caused the federal government to close for 2.5 days. When we realized we were stuck in the house with nowhere to go, we decided to experiment with a few recipes—this bloody mary mix is one of them.

We used the amazing buffalo sauce from Tessemae’s, a local Maryland company, to put this mix together. It has amazing flavor with or without the vodka. Make it for your next Sunday brunch, and savor the goodness.

Paleo Cherry-Watermelon-Kombucha “Jell-O” Shots (Adult and Kid Friendly)

While on Facebook this week, I came across the instructions for making “XXL Watermelon Jell-O Shots” and I would be lying if I didn’t click right on that link (here it is for those of you who are curious). It seemed like a lot of fun, but we weren’t exactly interested in the sugar-laden Jell-O packets. We’d had success previously with gelatin for a Halloween treat, so I decided we should give it a shot.

This was a ridiculously popular treat at the 4th of July paleo potluck we attended. We had fun with the hosts, Paleo Parents, and fellow bloggers The Domestic Man, Predominantly Paleo, and Merit + Fork, among others. We also made our Gurkensalat and used the flesh from the watermelon to make our Watermelon-Mint Salad. You’re going to love making these paleo “Jell-O” shots. They’re probiotic, powerful, and tasty.
