Mediterranean Coleslaw

While we often make a lot of meat-centric dishes, we are also a big fan of vegetarian recipes—and coleslaw recipes are one of our favorites. We have one already, which we based off the Colonel’s famous recipe, but we wanted to stray off the path a little for this one.

Meyer Lemon Chia Pudding

I’m excited to share with you today this recipe for Meyer lemon chia pudding.  About a year ago, I was walking through a Costco and ran into a gigantic bag of chia seeds and wondered how to use them.  This particular item had come up a few times in podcasts and reading as a seed high in fat, fiber, and protein, but I didn’t know much about it.

Simple Cinnamon Applesauce

Applesauce was something that I grew up enjoying, but only out of small, plastic containers.  As I grew older, I stopped enjoying the treat, and assumed I didn’t like it anymore.  Heather encouraged me for almost a year to try her homemade applesauce, but I always turned it down saying I wasn’t “an applesauce person.”  That was stupid on my part.

Thankfully, last autumn, she made it anyway.  This applesauce is delicious, and I look forward to the times when she cooks it up at home.  Better yet, it’s really easy.  I hope you’ll take the time to make it as well; it’s a delicious homemade treat that’s way better than the stuff that’s pre-packaged in plastic.

Harvest Carrot-Apple Muffins

When we began our focused journey on more healthful living through food, we did what many people did (and do)–we started juicing.  With a nice food processor/juicer that we found on sale at the local department store, we went to work with Costco sized bags of carrots with some lemon.  This was delicious, and was certainly a step in the right direction.  While carrot juice ends up being liquid calories without the same satiating effect, it was better than our previous habits.

We still occasionally take out the juicer, and when we do, Heather always feels guilty about not using the pulp.  Through several attempts, we’re happy to report a way to put that pulp to use.  Don’t worry–we’ve suggested a substitution if you don’t have a juicer or don’t want to juice.

Grilled Portabello Mushroom Caps

Mushrooms.  These fungi were something that I strongly avoided for most of my formative years–my father is not a fan, and I ipso facto also was determined to dislike them.  Eventually, I was tricked out of this delusion, and I’m a better person for it.  I would challenge each of you to go eat something you are certain you dislike because you’ve “always hated it” and be pleasantly surprised by the outcome.  Thanks to this initiative, I now enjoy: asparagus, brussels sprouts, beets, lobster, and mushrooms.
