Split Barbecue Chicken

For Mother’s Day, we were lucky to visit my parents and stop by the farm for eggs and a whole chicken.  Moving Meadows Farm is a local hangout at the weekly farmer’s market, and my parents have come to know them fairly well.  They were awesome enough to let us stop by Mother’s Day morning, and it was very much worth the trip.  The fresh eggs and chicken really added to the food enjoyment for the day.

This chicken takes advantage of our barbecue sauce and memphis rub.  Now that we’ve got perfect outdoor grill weather, I can’t think of a better meal with the family.

Ginger Chicken with Broccoli

Believe it or not, Brent and I have never eaten at P.F. Chang’s until Stacy invited us among others to join her in a re-creation party, P.F. Chang style. Of course we wanted to participate, but having no idea what the food was like (other than knowing it was asian-themed casual dining).

A few days after Stacy’s invite, we ordered take-out from P.F. Chang’s. Brent got the gluten-free thai basil sambal noodles with shimp (from the new “Inspired” menu–recreated here) and I got the gluten-free ginger chicken with broccoli. Before diving in, set aside a small container of each of our dinner items for taste-testing during our actual cooking experiment the next day.

Supreme Quiche

We used to order delivery pizza a couple times a month–it was either that or Chinese food–whenever we were over-stressed by work and grad school or simply just too tired and lazy after an excessively long day. It was easy. It was fast. It was tasty. But delivery doesn’t save you money and it definitely doesn’t help you stay healthy. So, we created the supreme pizza quiche after the pizza we used to order most often. It’s like eating pizza for breakfast, but a way healthier version. Who wouldn’t want that on occasion? YUMM.

Hot and Sour Soup

Hot and sour soup has always been a staple for me whenever I have been sick.  I can’t really remember exactly when it started as a sick food cure, but I could always stomach some hot and sour soup and General Tso’s chicken regardless of how terrible I felt.  This happens much less often, as I try to stay away from tofu and the other unknowns of take-out, but I wanted to still enjoy the soothing soup that always helped me feel better.  It’s a bit involved, and will definitely involve a trip to your local international market, but it will be worth it.

Succulent Roast Chicken

A few weeks ago, Heather and I threw together a bunch of ingredients we had in the house to roast a chicken.  We found some chickens at Whole Foods that are pasture raised, and aren’t horribly expensive, so we decided to put together a quick dinner.  We threw the picture out on Instagram, and someone on our Facebook page asked for a recipe.
