Open-Face Breakfast Sliders

For this week, I wanted to share a variation on breakfast sandwiches that I put together for Mother’s day.  As a lifeguard growing up, we often went to the local deli for ham, egg, and cheese on an everything bagel, and I remember how great it was to be able to eat whatever I wanted with no noticeable affect.

These are a little fancier, but will still hit the spot for breakfast.  Feel free to go wild and take your own spin with them, this is just a basic suggestion.  The added bonus was being able to pick up these eggs from the local farm the morning of and enjoy them hours after laying.  Cooking eggs that fresh requires a different approach, but boy are they delicious.

Apple-Bacon Pork Chop Stew

This recipe was born of St. Patty’s Day excitement.  While we were trying to cook for the weekend, cabbage and pork were some popular recurring themes.  In that spirit, we put together this “stew” of sorts.

This is a tasty, hearty dish that could be stepped up with your favorite tuber (potato, sweet potato), but stands well on its own.  I suggest you give it a try for a change of pace with bone-in pork chops.

Midwestern-Style Beer Bratwurst

As a Wisconsin-born American, I grew up loving three things: the Green Bay Packers, cheese, and bratwurst.  I still avidly participate in two of these three things (cheese, while delicious, usually makes my body sad).  We used to do a brat fry every weekend, even in the winters with average temperatures many degrees below freezing.

We always would grill the brats, and then cook them down in a beer sauce with butter and onion.  This delicious broth added flavor to the bratwurst while cooking them all the way through after browning them on the grill. After a conversation with my dad, he mentioned that at the weekend cook-outs at church functions, they were unable to cook with the beer because there are kids eating.  We all know the alcohol cooks off when boiled, but nevertheless, they would substitute beer with chicken broth.  This was a great find, and surprisingly just as awesome.

Bacon Jalapeño Bread

We came up with this bread recipe a month or two ago following our invitation back to the Paleo Parent‘s house for another great pot luck, this time to celebrate their upcoming book, Beyond Bacon. As adamant pork lovers, we couldn’t help but make something with bacon in it.  Taking Heather’s awesome orange-cranberry bread as a template, we decided to go a little further.

Beef Barbacoa

When in a pinch, I will occasionally visit the local Chipotle for a quick lunch; their carnitas or barbacoa salad with extra salsa, hot sauce, and guacamole is extremely filling, and not too hard on the wallet when it comes to healthy eat-out options.  The other day, I wanted to attempt to recreate some of what I love about barbacoa at home.
